Honey Pistachio Bars

Pulse 95 grams of roasted, salted, shelled pistachios in a food processor, then remove 30 grams of it and set aside.

Add 100 grams of caster sugar, 3 tablespoons of honey, 250 grams of flour and 2 sticks (225 grams) of cold butter cut into chunks into the food processor. Pulse again until well combined.

Press the crumbly mixture into a 20×20 cm baking dish. Use a small cup as a rolling pin to flatten the top.

Bake at 175°C for 30 min. Remove from the oven, sprinkle the top with the remaining pistachios and a pinch of salt, then drizzle with a bit of honey. Allow to cool for 10 minutes, then cut into 5-cm squares.
